Age: 8-Year Mash bill: 60% Corn, 36% Rye 4% Malted Barley Seelbach's Notes: I highly recommend giving this 5-10 minutes in the glass as both the aroma and the palate will reward you. The nose starts bright and spiced with citrus oil, white pepper, and gentle oak, but the longer it’s open it still ends on soft maple syrup and brown sugar, and even longer of rich, seasoned oak. The palate is plush for 105 proof, starting with soft ginger, clove, and lemon oil but quickly opening to toasted vanilla, and creamy red fruits. The finish is long and silky, giving slightly spiced oak, brown sugar, and candied orange peel. Tasting Notes: Nose: Sweet maple syrup, brown sugar and light oak. Taste: Molasses, syrup, vanilla, baking spices and slight citrus zest. Finish: Long; sweet mouth-coating molasses and rye spice.
